It sounds like there may be more opportunities to do pastries than cakes this summer, though, so I don't know how many more cakes I'll actually get to do. In many ways I'm disappointed, but then I get thinking about gardening and spending outdoor summertime with my family, and I get pretty excited. We just got approval from our hoa to install three more garden beds, and I've got four trays of seeds already started so I think I'll be plenty busy. Besides, I've missed baking at home and doing different kinds of desserts (or cakes) and this'll provide plenty of opportunity to do more exploration. I'm losing track of time...it could've been the week before) and they're growing, which is the first hint that maybe, just maybe, spring is around the corner. Though, you'd never guess it with all the snow we've had in the last couple of weeks. Judging by the garden boxes, there's probably a good 6 inches on the ground right now. Anyway, the first herbs and vegetables are started -- Brussels sprouts, red onions, tarragon, basil, miniature strawberries and snapdragons (I had the seeds from last year and figured I might as well) are all sprouting. I'm really hopeful for the brussels sprouts, since they haven't worked out the last two years. It's been great, but very very busy. I'm looking forward to getting back to cakes, even if it's only part time. And, it's the middle of winter (aka garden planning time). I started sifting through seed catalogs today and am so excited (especially about <a href="http://www.reneesgarden.com">Renee's Garden</a>, they always manage to find great varieties)! We're hoping to add at least one more raised bed this year to give us more soil to play with. I also had the notion to plant sunflowers along the south side of our house, which gets plenty of sun -- I love all the deep, vibrant colors that are available now. The deep reds are especially my favorites and would look beautiful with the colors of our house. I also came across seeds for tri-colored beans, and Alpine Strawberries (perennial strawberries! can you imagine?!) Now my seasonal allergies are wreaking havoc, so it takes some nerve for me to go out and spend any amount of time in the backyard (we have a beautiful crop of ragweed between our garden and the cornfield, though). But lo and behold, we're actually getting a decent harvest of tomatoes and peppers. It's been a dry summer, so I've had to make a conscious effort to water them a couple times a week so they don't just wilt and die. It seems like they're turning red faster than last year and I have to wonder if less water is actually doing them good (or I'm just distracted with too many other things and not checking them every single day for what seems like an eternity).<div><br /></div><div>Today I threw in some new seeds in hopes of potentially reaping a fall crop this year, but I'm not holding my breath since we got our first frost in only the 3rd week of September last year. I planted more carrots, beets, green onions and parsley. I'd love to plant some sweet potatoes, but know nothing about it and haven't really invested any time in finding out. Maybe someday. After it was covered in fondant, the middle tier was covered in coarse sugar. Then the tiers were stacked and airbrushed for the gradual color effect. Then, they were shimmered with luster dust all over. At this time last year, there was absolutely nothing in the garden. Our last frost was on Memorial Day, and so I put all the seedlings outside that following week. They did great from there, but we weren't harvesting tomatoes until mid-August I think, and then the first fall frost came as quickly as the third week of September and killed everything.<br /></div><div><br /></div><div>This year I've been determined to have food earlier and do something of a three-season garden. I suppose it's moderately successful so far -- the perennial herbs from last year came back fuller and lusher than I imagined: oregano, chives, sage, lavender, and thyme. The cilantro went to seed last year and managed to reseed itself all over the place, so that will be plenty. I also started some cool-weather vegetables which are coming along slowly but surely: beets, carrots, peas, leeks, swiss chard, spinach, lettuces and a solitary broccoli plant. We've been harvesting spinach for about a week for salads and pizza and quiche, so that's nice.</div><div><br /></div><div>Now the summer crops, on the other hand, are testing my will again and again. I started seeds way back at the beginning of March. We were really brave but determined, and put the seedlings outside in April, because we built covers to go over the gardens to protect the plants and figured they'd be safe enough. The problem has been, however, that it gets really cold at night and really warm in the daytime, so we can't just leave them on all the time. They're fairly heavy, and there's four of them, so it's no little thing to go put them on or take them off the garden, and contrary to our original design, we didn't build in a way to just prop them open. So I had put the seedlings out in the garden during a beautiful week in April -- sunny, warm, etc -- and then we had to leave town for a family wedding. A day and a half later we came back and pretty much all the seedlings had fried. I believe it was too much sun exposure; Scott thinks lack of water. Granted, I didn't temper them for very long, just a few days (what good does putting them outside do when it's cloudy and rainy for three-four days at a time?) and it came back to bite me.</div><div><br /></div><div>So I started over. I put in rows of all the same peppers (jalapeno, pablano, mixed sweet and green peppers), tomatoes (roma & brandywine) and flowers (snapdragons, delphinium, columbine, nasturtium, pansies, and marigolds) with plenty of time to start over. At least if they get started outside they don't need to be tempered for the adjustment, right? Forget about the brussels sprouts, it's too late already. I'll try those again for fall. Everything's been coming up a little at a time, and I was breathing a sigh of relief that we would have vegetables after all. Now suddenly this week, the week before Memorial Day, the weather's been up and down and rainy and sunny and generally unpredictable. We've had the covers off for weeks, but put it on two nights ago because it was gonna be really cold and there was a chance of frost -- good save. But I took them off again yesterday because it was in the 70's. Last night I worked late and didn't think about it. This morning I went out and it looks like most, if not all, the seedlings are shriveled again, and the tomato plant we bought a few weeks ago on a whim is barely hanging on. I checked the weather from last night and -- WHAT?! 28 DEGREES?!?!</div><div><br /></div><div>I'm feeling defeated, but gotta be realistic and admit that I was gutsy (or just stubborn) this year. If I never tried it, I'd always wonder. Some of it's paid off. At least we've got herbs and spinach already. Beets and carrots and lettuce will probably be next, hopefully followed by peas and broccoli and leeks. It was also the BIGGEST cake I've ever made in one tier. It has 6 16" layers of cake, all split and filled with Bailey's buttercream, so the cake itself is about 13-14" tall. The feet and hat on top were carved out of rice krispie treats (leg, anyone?) and covered in fondant. I got so busy in August and September with the tomatoes I was harvesting that blogging fell off the radar. Then I took a short vacation (sadly, when we returned the tomatoes were clearly finished because of the first frost in mid-end September!), then wedding season was pretty much over for the season, then it was Thanksgiving and Christmas, and now it's the middle of winter and here we are covered in snow. Weddings don't stop, of coarse, but they definitely slow down until about May -- rather parallel to gardening season, as a matter of fact. <div><br /></div><div>I've already started getting seeds and planning, but debating whether to expand the garden space. At the least, I'm gonna try a lot of flowers from seed to plant around the perimeter of the house, which means we'll have to get a lot of compost to amend our sandy soil -- that's why I opted for raised beds for the vegetables. I'm glad, too, because it wasn't long and we had grubs move into the lawn but so far none in the garden boxes. I'm not sure how they'll affect the landscaping or new flowers yet -- I'm sure time will tell. I'd also like to incorporate some kind of row covers to extend our tiny growing season, but haven't found the perfect ones yet (size is the issue so far), so we may have to fabricate some ourselves. If we had those, I'd start planting seeds in the next week or so. Just as of yesterday, the one I posted a picture of a month ago started to turn orange, but there's still a gazillion that are starkly green. Anyone have any thoughts? I've read a hundred different theories -- some say they need warm nights, others that they need to be left a little dry, etc, etc. I can't do much about the night temperatures. We're already having nights in the 40's and 50's (I don't want to think about what that means for winter!). But I did hold off on watering for 4 days while the temperatures were in the mid-upper 80's, and then the one started to turn; but what about the rest? Even the pepper leaves were starting to curl. Guess I'll just have to keep waiting and dreaming of roasted heirloom tomato sauce and soup... or learn to like green tomatoes. By the time my tomatoes turn red, all the other complimentary ingredients will be done! This is one of the first ones I planted outside in the spring -- for size comparison, the wooden plank beneath it is 10" tall. Anyone need some shrubs? I'm gradually taking them out because they're crowding some of the herbs and vegetables. However, the Japanese beetles apparently love them, so I'm glad they're distracting the beetles from attacking other plants. Summer is flying by! I've been so busy making cakes and taking care of my gardens that I keep forgetting to take enough pictures and post them. I'm way behind on keeping up with my cake pictures from the past two months, so while I'm collecting those I'll talk about my first real gardening season. <br /><br />We had our yard landscaped right around the end of May, and had our landscaper put in a couple of long raised beds in our backyard. Each bed is 3'x20', so I thought this would be plenty big enough to start with. I started my seeds inside at the end of March, planting plenty of everything thinking that some would die or get eaten by bugs, or whatever, so I would end up with a couple of everything. Well, it turned out that pretty much everything did really WELL, and I had to make a home for about 18 tomato plants (even AFTER I thinned them out in the starters!), about half as many pepper plants, brussels sprouts, marigolds and herbs. Again, I transferred them all to the beds thinking some wouldn't make it due to the wind, bugs, critters, or whatever, but pretty much all of them DID. So I gave a bunch away to neighbors and coworkers to have their own gardens started, and kept as many as I thought the space could handle. Now, three months later, it's STILL too crowded, and we're debating whether to try for a winter garden or if we'd have to add more beds. I guess this is a good problem to have? I started it directly from seed in the garden at the end of May, and it grew like crazy. We just cut a couple of leaves from each plant at a time and it's still plentiful. I think it should keep on sprouting through fall until frost. I also planted spinach just to the left of it, and some mesclun mix which have both done fairly well. (see the Romaine heads just to the right?) The spinach is starting to taper off, I'm guessing because of the heat. Should I start some more seeds to have for fall? They seem to be doing ok, so hopefully we'll have a nice array of vegetables and herbs over the next few months.</span></span><span style="font-size:100%;"><span style="font-family:trebuchet ms;"><br /><br />This coming weekend is a ridiculous mix of last-minute weddings and graduations, so there's plenty of action this week. Plus, I was assigned to design and build a display cake for the local Metro Bride magazine (July issue, I'm told) that's getting delivered on Thursday. Thankfully it was mostly finished yesterday except for putting the gumpaste roses on. Hopefully my coworkers will have time to finish it while I'm off these two days, or else it'll be a mad scramble on Thursday morning when I get back. We stayed with some family in Alexander Valley (just north of Sonoma), so we toured wineries, went to San Francisco a couple of times, and ate some amazing food in Healdsburg.<br /><br /><br />The best dinner I've ever experienced was at Cyrus, which was 3.5 hours of utter bliss: Seared foie gras with ginger-pineapple pain perdu and rum flambe, pappardelle with braised rabbit, red cabbage and mustard froth, beef with gnocchi, roasted porcini and ramps... is your mouth watering yet? For dessert: rose tea, strawberry and pistachio macaroon, honey lavender cannoli, elderflower caviar and mango sorbet. Ahh! And the service was exquisite, to the point it was entertaining. There was nothing to wonder "if" about; everything was taken care of and anticipated for you. What could've possibly made this experience even better? Working in their kitchen -- so I did! There weren't a ton of surprises, since I bake and decorate cakes every day, but their kitchen staff are just as friendly and helpful as the front of the house staff; no Chef Ramsey tempers here. </span> <span style=";font-family:trebuchet ms;font-size:100%;" >And, despite their small space (I'll never complain about my cake room again), the chefs and cooks are nowhere short on inspiration for delicious combinations. Ever try a lemon-rosemary soda or a lime-starfruit ice? We did here. And it was all perfect. I'd go back for a weekend just to have dinner there again.</span><span style="font-size:100%;"><span style="font-family:trebuchet ms;"> If you have the chance, don't miss it.</span></span><span style=";font-family:trebuchet ms;font-size:100%;" ><br /><br />So I came back to work on Monday to an immediate assignment of creating a five-tier display cake for a local hotel in two days. You're kidding...<div><span style="font-family:trebuchet ms;">At this point I haven't decided what this blog will be about, exactly, but hopefully at some point interesting and knowledgable about food, and perhaps especially cakes, since that's what I do every day. "But," you're wondering, "how do you get a cake engineer?" Let me explain.</span></div><br /><div><span style="font-family:Trebuchet MS;"></span> </div><span style="font-family:Trebuchet MS;">I grew up with lots of interests, knowing I had the ability to do whatever I wanted or put my mind to. Music and golf played a big part, and cooking was fun but nothing serious. I enjoyed looking at cookbook pictures and trying new recipes every now and then, and learning from my younger brother's experiments with pizza dough and bread sticks on Friday nights. But as I got older and had to start thinking about career goals, I decided to go in the scientific direction -- it had plenty of opportunities and paid well. I liked airplanes and most mechanical things (other than cars) seemed interesting so I decided to study mechanical engineering at Purdue University. I graduated, got married and moved away and went to work for a small automotive supplier for a couple of years. It was awful! There's no way I wanted to spend a third of my living hours doing this work, so I had to rethink my whole career. At least 8 hours a day, five days a week was a lot of time, so it'd better be something I enjoyed or found worthwhile. I thought back to all the things I liked to do before I dedicated so many days and hours of my life to engineering school, and started to think seriously about food. There happened to be a fairly well-known, well-reputed food business nearby, so I applied.</span><br /><div><span style="font-family:Trebuchet MS;"></span> </div><br /><div><span style="font-family:Trebuchet MS;">I was hired into a restaurant, into the most unpredictable, zaniest coffee shop you could ever find. But it was fun, fast-paced, had excellent food and coffee, was flexible and provided the perfect schedule for me to attend culinary school. The coffee shop was a transformation for me... of coworkers, of attire, of knowledge gained through mere interest, and of lifestyle -- working weekends, holidays, early mornings and sometimes evenings. But the people were lively, friendly and interesting, and I loved it. Still, I felt that I couldn't continue working in a coffee shop forever, that I should be doing something more skillful, and after a little over a year I had finished a baking and pastry certificate; so I applied to be a cake baker and decorator and was offered the job. Now, here I am.</span></div><div> </div><br /><div><span style="font-family:Trebuchet MS;">This is where art and science collide into masterpieces. Cakes are so interesting... by looks, aromas, flavors, textures, and especially in how they're made. And then when you talk about wedding cakes, there's the drama of actually transporting the cake from point A to B in one piece, rain or shine. At first I was afraid my engineering training was being tossed out the window, but after almost a month in my new position I'm beginning to recall things I learned about mass production and battles between groups over how each will meet their production goals with limited time and equipment. Better, faster and cheaper? Sorry, you can only have two of the three. Heat and mass transfer -- why couldn't we have done finite element analyses on baked goods??? Statics and Materials Science -- how about a stress analysis on a five-tier crooked cake? How many dowels do you actually need to support it so you're getting the best possible cost for materials? Ironically, I work with two other engineers -- one is my boss, the other is baking and decorating cakes with me.
